I love making cupcakes, but have to admit that they can sometimes be a bit dull. I have therefore been having a go at some different flavours and these Rolo cupcakes are a chocolate lovers dream.
Makes 12 Cupcakes
For the cupcakes:
4oz caster sugar
3oz self raising flour
1oz of cocoa powder
Surprise inside caramel filling from Dr. Oetker
Salted caramel buttercream:
5oz salted butter
10oz icing sugar
A few drops of caramel flavouring
A dessert spoon of cocoa powder
Start by making the cupcakes. Pre heat the oven to 180C.
Cream the butter and caster sugar.
Mix in the eggs, flour and cocoa powder.
Divide the mixture between 12 cupcake cases and cook for around 15 minutes.
Allow to cool slightly before adding a suprise caramel filling into the middle of each cupcake with the Dr Oetkers pouch.
To make the butter icing, cream the butter, icing sugar, cocoa and caramel flavouring together. Pipe onto each cake and add a rolo on top of each one.
