Baileys and Marshmallow Mug Cake and Degustabox Review

Food Thoughts Cocoa: This is a gluten free cocoa with no added sugar. I used it in the mug cake recipe below and it tasted lovely.

The Snack Organisation: We had the lightly salted rice crackers which tasted lovely. I really enjoyed the freeze dried apricot as well. A little on the expensive side but I would buy them as a healthy treat.

Cirio: This has been in a previous box and they are good quality tomato based products.

Kabuto: These have also been in a previous box. It tasted nice.

Lorina: This coconut and lime flavoured lemonade tasted lovely and is something I would buy when I was out in a cafe.

9Bar: The boys enjoyed this seed and carob bar.

Liberation Foods: These were lovely mixes of nuts with some great flavours.

Chip Strips: These are really cool strips of crisp. The flavours were strong and it was a novelty that they were long strips.

Provena: I don't have a need for gluten free products but I am happy to give them a try. I was unable to eat these.

President: We were given a voucher to buy a butter or spread. I don't go to the shops often so find it difficult to redeem vouchers. I managed to get the butter which is fine, but I would have preferred to get the spread which wasn't stocked.

My friend  recently showed me a copy of  Mug Cakes: 40 speedy cakes to make in a microwave so  I thought I would give one a go. I have never found mug cakes to be quite as tasty as a standard cake, but if you are fancy a cake and don't want to speed hours in the kitchen then mug cakes are the way to go.

This recipe makes one large mug cake or two smaller ones (I opted for 2 small and make big man one without the baileys added.)

You will need:

2 tbsp butter
1/2 tsp cocoa powder (I used Food for Thoughts Cocoa)
1 egg
2 tbsp Baileys
3tbsp caster sugar
3tbsp self raising flour.

Topping:

A handful of mini marshmallows and extra Baileys.

Melt the butter for about 20s in the microwave.

Add the other ingredients and mix well.

Microwave at 800W for 1 min 45s

Top with mini marshmallows and microwave for 10s.

Pour over some Baileys.

Enjoy your superfast cake!
