Double Chocolate and Almond Biscotti
Week 2 of the GBBO saw biscuit week. I had never tried making biscotti before so I thought I would give it a whizz. I decided to go for a recipe that makes about 10 as I hadn;t got a clue what they would turn out like. In essence these are a bit like a dried brownie - which taste pretty nice when dunked in your coffee.
1oz cocoa powder
3 oz plain flour
1/2 tsp sodium bicarbonate
2oz fine demerera sugar
1oz crunchy demerera
1oz dark chocolate melted
2oz of chopped almonds
Mix all the ingredients together and place on a baking sheet. The mixture is quite dry and I added a dessert spoon of water to help it mix.
Bake in an oven at 160C for 25 mins. Take out and cool for 2-3 minutes.
Now comes the hard part - cutting it! It is difficult as it is still quite gooey. You then need to put them back in the oven for another 10 minutes.
Personally I enjoyed these as they were chocolate. They were probably a bit thicker than the GBBO judges would have liked though!
