Cinco de Mayo - with Discovery Foods

Cinco de Mayo is a Mexican celebration on 5th May. To celebrate yesterday, Discovery Foods gave me some of their products to try. I love a Mexican feast. I also find it an easy meal when entertaining as all the veg can be chopped in advance, and it just takes a few minutes to cook. It is easy for me to cook a less spicy version for the boys sensitive palates and everyone can just tuck in. The garlic and herb sour cream was a perfect mild sauce for the kids. We were all a little reluctant to taste the Green Jalapenio Relish due to it's fluorescent colour. Then we tried it and all the adults loved it! Alongside normal beef and chicken fajitas I had a go at creating my own recipe for everyone to try.

Butternut Squash, Feta and Beef Fajitas

I started by par boiling then roasting some butternut squash. I then chopped some onions and pepper. I fried this with some beef strips adding some seasoning and sauce. I then mixed in some rice (I used a microwaveable packet but if you have more time just cook some) I then added the roasted squash and the Fajita Season and Sauce.

On a flour tortilla I added a line of sour cream and jaleopeno relish and crumbled some feta cheese.

Then added the cooked mixture and rolled them up. They may not look that pretty but they tasted pretty yummy even if I do say so myself!

Now I just need to convince my husband that we need to go to Mexico to support big man's learning in geography in year 2! Wish me luck!
